Which statement, of course, is a complete straw man, because the claim is not that "because we don't know everything, we know nothing," it's actually "because we don't know everything, we don't know everything."
Those quoting science (not the ones who actually do science) tend to engage in exactly the opposite fallacy, which is to presume that because science knows something, it knows everything.

All the debates focus on pretending there is a debate and a controversy, there are theories and alternatives. Science is mostly wrong and
there is no problem.
