If you are interested in chemistry at all, there is intersting work in
Materials (e.g. biomimeic materials, bio-compatible materials)
I think it is branch of materials science. There may be some animal work, but you would leave it to doctors to do human studies.

Meh, not excited by nanotech as much as I am with bionic stuff...though I bet somehow, someway, nanoism will overlap with my chosen prof.
