well, the Netherlands makes cheeses that are basically to my taste overall, firm and not too pungent... Leidse kaas is just my favorite of the lot.

and do you know why I like cumin Brian? it's because it prevents me from getting uncomfortably gassy, it makes me fart most pleasurably and abundantly... want more data?

I first encountered Mimolette during my recent visit to your splendid city. It has a pleasing color and tastes good in my opinion, but its rather assertive aroma reminded me a bit of dirty socks. Later I learned that it is said to have been de Gaulle's favourite. :)

I thought mimolette was a French imitation of Dutch kaas because the later were taxed so heavily importing them was not a realistic option?

Just looked it up and by god you are right :tup: A copy of Edammer cheese; those red balls. It was coloured to ensure a visual difference but not coated allowing the cheese mite to eat the outside giving a nutty taste.
