Add bacon bits and jalapeno peppers to the mix first, of course.
Depends on how powerful a punch you want from the taste. With simple grilled tenderloin, milder will do quite nicely and too much umph will kill the taste of the meat itself (if it's not game, of course).

I think I'm going to try this on sunday.

Gosh, a woman who eats game-meats ... that's hot.
these are things we think we know
these are feelings we might even share
these are thoughts we hide from ourselves
these are secrets we cannot lay bare.

Do take into account that we live in the relatively sparsely populated north of Europe, so the culture regarding hunting and eating game is a bit like in Canada and Alaska, possibly also Michigan (if I have understood those cultures correctly - I have not been to any of them).

If loads of women didn't eat elk (moose, Am.) in Finland, we would have a sizable problem: what to do with the around 60,000 - 80,000 carcasses that the yearly hunt produces. And the elk (and to some extent also deer) need to be hunted, or there would be much more damage to young forests and many more traffic accidents.

Also, reindeer is considered a delicacy and eaten not only in the north, where they are the main livestock, but also in the south, and people pay good money for that meat.

A few links, if you're interested (all about Finland, all in English):

The hunt is still on (2010)
Elk hunters glum about season's haul (2011)

Hunting in Finland (EU fact Sheet, 2009)

Our morning paper (HBL, the largest circulation Swedish-language paper in Finland) had this story about game hunting and recipes - beware, it's been through Google Translate only, so there are a few silly sentences

Ronja, Merkin women like to get all fluttery over game. The fact that they usually only see something "wild" in a zoo may have something to do with that.

From my perspective (Thump may have a different one) - yes. It's not done. Game meats are just not available - well, perhaps at some fancy schmancy restaurant where it's considered a luxurious novelty because nowhere else serves it, or maybe you can find the meat at specialty butchers (though I never have)... it's just not here. I've seen it on a menu a couple of times, usually accompanied by a premium price, but never in a butcher's and definitely not in a supermarket.

Edit: In fact, since I'm wanting some venison I just had a look 'round at all the specialty butchers' shops in my area... only one offered it, and that by special order only (though they did offer processing of same if you bring in your own carcass!). I only want a pound of the damn stuff! :lay:
