Lard is king for baking and frying, olive oil and butter (or ghee) for saute. Olive for any sort of dressing or mayo. Good olive oil and fresh, organic eggs makes the best mayo, I use whole eggs, good qulity olive oil, a little mustard powder, and apple cider vinegar with the mother.

Finn's Hotel? is that part of Finnegan's Wake? I thought I knew most of Joyce, but am not familiar with that one.

Dont blame you. I am one who never understands the big fuss about Joyce. I have the same feeling about the German author Heinrich Böll. To me much overrated. IMHO.
