Organic costs more, currently, as there is more manual work. Switching to perennial plants that have fruit we can eat would solve that. But all grains are annuals or inany case destroyed above ground in the harvest.

Not if you put it into landfill or an anaerobic digestor, and burn off the methane. CO2 is less of a greenhouse gas than methane. Plus organic farmers eat lentils and fart a lot.
