Well since the overwhelming majority of muslims are brown-skinned, and brown-skinned people are evil and inherently inferior, I think it's a fair conclusion that the hating of Islamists is racist (though of course completely justified)

Many people who show strong anti-islamic feelings are racist, but that is because it is a good way to hide one's racism; it is typically conflated with anti-immigrant sentiments as well. However, it is possible to be anti-islam (at least its fundamentalist side) without being racist; the two do not completely overlap.

More generally, would people say that most racism is negative, generalised sentiments towards those who are not of your own race, or are many racists mono-racists; e.g. a white person hating black people but being fine with Asians?

That is a somewhat nasty and prejudiced statement, but not racist. The person behind the robe could be white, black, arab or asian woman...
