Actually I think the zombie craze is much simpler than that. The "zombie apocalypse" meme began among gun owners who coined a humorous phrase that they use when someone asks "why do you have to have all those guns?" We probably have Milla Jojovitch and the movie version of a silly video game to thank for it.

You see, nobody likes zombies. Nobody can rationally argue that one should not kill a zombie or that zombies have civil rights that must be respected. It's a public service to kill zombies because zombies are inherently evil and universally destructive and need to be destroyed... just like Marxists.

In this context "zombie" is a place-holder for anyone (particularly Marxists) who becomes an enemy of liberty and freedom, who, like zombies, have no rights and need to be killed as a public service and a matter of sanitation.

It's really quite a brilliant disinformation campaign that serves a very useful purpose. Marxists aren't the only ones who can use propaganda and disinformation you see.

I never really gave a shit about zombies until Shaun of the Dead. I loved that because of the humor. Now it's difficult for me to take any "serious" zombie movie seriously because I now view zombies as inherently silly. Although I do enjoy The Walking Dead, but that's mostly because it's a good drama. The zombies are for me incidental, merely a plot device to move the story along.
People think "queue" is just "q" followed by 4 silent letters.

But those letters are not silent.

They're just waiting their turn.

I think zombies are the perfect villain because they're easy to hate. They're evil and they're not human, or at least no longer human, so killing them is a no-brainer*. Well, rather, killing them (by proxy through the film's hero) is a good method of stress relief, guiltless and lacking in consequence since the creatures are already dead.
There is also a sad and melancholy aspect to the whole affair, if bleak and depressing appeals to you (as it does to me). Oftentimes in the films- and TV shows such as The Walking Dead -the zombies are former family members and loved ones. This makes it especially heartbreaking when the protagonist of the film must put them down. It's the perfect recipe for drama and tragedy. On a personal level, I especially empathise with this and can relate to it because of my little sister having suffered a traumatic brain injury. The damage to her brain was so profound that my sister is no longer my sister. There's so little of her left that she's now little more than a zombie. So, to me, zombie films, when done well, are incredibly sad. The French film They Came Back (Les Revenants, or The Returned) comes to mind as particularly poignant.
