For me The Godfather wins hands down. It is such a classy film and with no swearing in it!. I love the change and growth/demise of Michael from college boy to Don Corleone.
I love the look in his eyes when he says to Mo Green "You straightened my brother out?"... I love the fact that he takes no crap and is fooled by no one.. screw with him and you will pay.. no matter who you are.

It is amazing watching all his principles being destroyed by the desire to do the right thing.

When it comes to explaining how organised crime works, I think Goodfellas takes the crown. The Godfather (I prefer part I, but I saw II pretty late and was underwhelmed by De Niro's performance) defined the genre, but organised crime is pretty much just a setting. It has little relevance to the plot.
I'm going to vote for Carlito's Way, because it has a better focus then Goodfellas, while adequately portraying the tragedy caused by organised crime.

Can't argue with that, except to say that Goodfellas was a bit more all-around entertaining for me. Some blood, some violence, some insight and even some humor. I watch it a few times a year, but I've only seen Carlito's Way 2~3 times.
