How much does religious-thought stunt someone's emotional development?
It's just... I can't but help notice that the most religious folk at my Uni tend to have very little understanding of the extremes of emotion, and generally completely overreact to increasingly mild situations.
I'm wondering if its just me or whether there might be something to it.

"Quite a lot" would be my immediate reaction. I would suggest that more preoccupied/fixated/brainwashed someone is by religion, the less emotionally mature they are likely to be in general. Being deeply immersed in woo cannot but affect your personality. I can't put it better than that right now.
Of course, I don't see too many "religious" people myself these days, not up close and personal. That's to say, no-one I know or otherwise interact with is obviously big into religion. It's not a thing Irish people tend to discuss in any great depth if they can possibly avoid it.

I just wondered, if this was the case then studies demonstrating that religious people are 'happier' may have reached the wrong conclusion with the right data.

If you accept that religion is an artificial, man-made doctrine (and I think most here do) then it stands to reason that anyone that is forcing themselves to accept such a doctrine as fact, despite all evidence to the contrary, all internal doubts and all of the derision, persuasion and awkward questions of those around them that do not share that view, will be racked with internal contradictions which will manifest themselves in unusual and inappropriate displays of emotion.

Extremes of emotion are actually seen as 'sinful; in Christianity anyway. 'Anger' is actually a 'deadly' sin of course. Likewise 'lust' one of the most enjoyable extreme emotions is a sin. Passion of any kind is pretty much frowned upon, such is the anti-human nature of the Judaic religions, which make basic human qualities over which we have little or no control at times actually things that will send you to hell. Bastards!
Buddhism sees such emotions as misguided of course and leading one away from the peace and tranquillity which will extinguish yourself and your ability to experience loss and suffering.
