Why does it seem to be that the cultural holidays of the West are primary about gluttony (the modern celebration of Easter revolves around the consumption of chocolate eggs, and Halloween is a time of 'begging' for sweets--and I don't need to even mention Christmas!) while Eastern traditions are so much more about abstinence, fasting and discipline?

Ramadan and Lent are pretty similar traditions. As for gluttony, I'm pretty sure the majority of cultures in the world have similar traditions. There is plenty of gluttony going on in ramadan. They stuff themselves before sunrise and after sunset
