In the English language the "and" in "all of the civilized world, and the US" does not mean "all of the civilized world, which includes the US". Your misapprehension that it does makes me suspect that it does mean "which includes" in the Scottish language.

There is Lallans, aka Scots, and then there's Scots Gaelic, a Highland tongue. I don't think Edinburghers generally learn Lallans on their mother's knee, but probably some do.

Scots is not a language. Burn's Scots is quite different from Borders Scots which varies from town to town. It varies so much that east and west Borders has problems understanding each other.
Gaelic is totally different and was never spoken in the Lowlands. Irish Gaelic speakers (my wife) do understand written Scots Gaelic but the accent is quite different. Actually Edinburghers speak an odd English. There is a very snobby version spoken at private schools and Morningside. A very working class one spoken in the corporation schemes or is they are called in England estates.
