They're not eels, they're hagfish. A bit like the Lamprey.
Hagfish produce a special kind of slime that blocks the gills of attacking predatory fish, so that they can't breathe.
It's so efficient that they have survived pretty much unchanged for millions of years.
One hagfish can turn a huge quantity of water into slime with just a tiny amount of secretion.

The Japs will eat anything.

Mind you, they are supposed to be tasty if cooked right. I remember some king of England died of eating too much Lamprey, can't remember which one.
