Surimi (made from starch and pulverized white fish meat) is fairly inexpensive, and the most common way it's served in the US is as imitation crab. Personally I'm not fond of it, but some like it. If the criterion is exclusively 'nutritional need' then some sort of protein and starch slurry with vitamins added would do, no?
